Elaboration

The night harvest takes place in late August to preserve the aromas and quality of selection of our finest varietals. The grapes are cooled with dry ice during the transport to the winery to keep all their fruity aromas. Then a soft squeezed is performed, carrying out the peculiar maceration at low temperature to extract the maximum of primary aromas. The bleeding is produced through extraction by gravity and at controlled temperature, using selected yeast.

Tasting notes

Seductive, bright and clean pale yellow colour. Its bouquet presents outstanding floral aromas like orange blossom and nuances of tropical fruits like pineapple or peach. In the mouth is wide and unctuous but fresh at the same time with a very fruity finish that stands out for its excellent acidity.
