Elaboration

After carefully monitoring the ripening process, the night harvest is carried out in September to take advantage of the cooler temperatures that help preserve the aromas. The grapes undergo cold maceration to accentuate the aromatic intensity of the must, before a controlled fermentation at low temperatures for a period of 18 days.

Tasting notes

A light, pure yellow colour with greenish reflections, lively and with bright sparkles, an explosion of citrus, floral and tropical aromas with nuances of lychee and some hints of fresh asparagus, a powerful fruit on the palate whose smoothness and marked acidity make it feline, daring and at the same time delicate and intriguing, a balance that will not leave you indifferent.
