General Information
Produced from very low-yield vineyards over 60 years old, the ripening process is meticulously monitored to ensure the grapes are harvested at their peak, avoiding raisining on the vine. A portion of the harvest undergoes a natural drying process on racks set up at the winery, where the clusters are laid out on perforated trays and exposed to the sun. This method yields highly concentrated grapes with moderate raisining, adding intensity and complexity while preserving freshness. Fermentation takes place over 12–14 days at an average temperature of 22°C, utilizing very gentle maceration to ensure a delicate extraction of color, structure, and aromas.
A deep cherry-red wine with intense violet hues, offering notes of concentrated ripe red fruit alongside the fresh cherry nuances characteristic of the Bobal variety. It has a silky texture and great volume on the palate, exuding lush fruitiness and powerful oak influence that reveals menthol notes. It represents the pinnacle of roundness, power, and elegance.
